Breakfast for Dinner

Last week, my son Julian was begging me for pancakes. I promised I would make them for dinner one evening this week. My kids both love pancakes, so it's a real treat for them when I make them. I usually use a whole grain pancake mix, such as Bob's Red Mill. This time all I had was some Bisquick, so I just made the recipe from the box. They turned out beautifully! I have a really hard time getting the griddle to the right temperature when making pancakes. I tend to overheat it. This time the pancakes all came out golden-brown and perfect. I like to make fruit toppings for pancakes and french toast sometimes, but the kids prefer maple syrup. So, that's what we had. I like Grade B maple syrup the best. It has a stronger maple flavor than the rest. We can get local maple syrup at our natural-foods co-op here in town.

I couldn't get started on dinner until Sleek came home, so I listened to the sounds of him playing with the kids while I was cooking. He did come in and make the scrambled eggs for me. I have a hard time making anything else when I'm making pancakes. They definitely seem to require my full attention.

Cute kid quote of the day: "Pancake, meet your new home. My mouth!" That was from Annelies, my 5 year-old daughter.

My girls love pancakes!! My oldest thinks it's hilarious when we have them for dinner, which we do every time my husband has to go out of town. It's our silly dinner when Daddy's out of town!! We'll be doing pancakes for dinner next week, as he'll be gone.

This is what I use to make my pancakes on, and they always turn out nice and golden brown. It doubles as an indoor grill and a panini press as well (we make quesadillas and grilled cheese on it too).....it's a really awesome appliance, and get's used daily at our house.

My kids LOOOOOOVE pancakes! Every Saturday, I wake up with my 2-year-old's face about 3 inches from my own face, with him saying "Mama... get up! Pancakes! Mama! Get up! Up, mama! Up!!!"

Carrie: That is an awesome appliance! Wow. If I had more kitchen space, I'd be getting it right now. The last two times I've made them, I've used a cast-iron griddle. It's really old. My Mamaw gave it to me. I love, love, love cast iron.

rebecca: Next time I make pancakes, I'm using that recipe! What is it with kids and pancakes? I still love them, but when I was a kid they seemed like such a treat.

I love breakfast for dinner! My mom used to call it a Restart (get it??) Now I want pancakes.

Or as I used to call them... cakiePans, who the hell knows why?

mv: I always loved breakfast for dinner, or "a restart", as your mom put it. My mom used to make waffles on her giant waffle iron for dinner. We LOVED it.

So, does Sleek remove the gross umbilical cords out of the eggs like I do? If not, I bet my eggs are better ;) Haha

We were craving pancakes for dinner a couple weeks ago but didn't have mix and didn't feel like going to a store. I googled pancake recipes and made some from scratch instead... I will NEVER buy mix again. They were the best pancakes I have ever tasted.

BTW... we're going out for Indian tomorrow night instead of tonight since the man has migraine issues - I'll let you know what I think! I can't wait :)

Valyna: Nope. We eat the umbilical cords. I do pick out blood specks, though. God, that's so freaking disgusting!

Anyway, eat some Indian for me. (Chuckle!)

I can't tell you how many times I ate pancakes as a kid for dinner... they were my favorite. Occasionally my mom would go all gourmet on our ass and pour the batter into a waffle iron. An entirely new experience, and just as tasty.
